This is a delicious and popular Nigerian snacks made for parties or just when you want something to offer guests at home and it is one of my best things to bake
Ingredients :
- Plain Flour – 1Kg
- Baking Powder – 21/2 teaspoons
- Margarine – 500g (for flaky dough use butter)
- Salt – 2 pinches
- Cold Water – 130 ml
FOR THE FILLING:
- 4 medium-sized Irish potatoes
- 4 medium-sized carrots
- 1kg of minced meat
- 1 medium-sized onion
- Vegetable Oil
- maggi cubes to taste
- 3 tablespoons of plain flour
- Cold water – 1 cup
- Salt to taste
- 1 spoon of curry powder
- 1 medium-sized egg
Equipments:
- Oven
- Kitchen scale
- Rolling pin
- fork
- bowl
- pastry brush
- baking tray
- table (to roll out the dough/knead
DOUGH PREPARATION:

Put the 1 kg of flour in a bowl, put in the baking powder and salt and mix the ingredients very well.

scoop the margarine in small bits into the bowl of flour.

Use finger tips to rub the margarine into the flour till it becomes like crumbs.

start adding the cold water bits by bits , till you form a dough.

Knead the dough well, put back in the bowl and leave to rest in fridge.
THE FILLING
- Peel the Irish potatoes and scrape the carrots, wash and cut these two into cubes. boil for about 4/5 mins, drain and leave aside.

Wash and slice the onions into tiny pieces.

put 2 teaspoon of vegetable oil in a pot and add the minced meat and stir till the minced meat is cooked then keep aside.

put another pot on the cooker, put in 4 tablespoon of oil, add the sliced onions, meat carrots and potatoes .

Add your salt, maggi, and curry and stir properly so everything gets mixed.

in half cup of cold water add 3tbs of flour till it is dissolved and add to the meat pie filling.

Add salt to taste, stir and turn off the hat.
ASSEMBLING:

oven should be set to 180°c

use margarine to glaze the pan so your pie does not stick, or if you have baking paper you can just put it on the pan.

get your dough and place on your table, knead a bit more, using your rolling pin, roll it out to the thickness you want. I like mine a bit heavy.

before i roll my dough out i usually cut them to smaller pieces. I take a scoop of my filling and place it the middle, i fold one part of the dough to meet the other , then using a fork to press it down.

I whisk my egg , using my pastry brush i rub the egg on the sealed meatpie. The egg gives it a glossy and golden brown look.

continue the process till you run out of dough.

Set the tray in the preheated oven and bake for 30 to 40 minutes. different ovens vary vary but you should be able to tell when it is ready.
