Prawn Fried Rice

  • 2 cups of rice
  • 225g jumbo king prawns
  • 3 table spoon curry
  • 200g spring onions
  • 600-700g mixed vegetable. (if you prefer to use fresh vegetables, you would need: carrots, peas, green beans)
  • 1 small tin of sweet corn (optional)
  • 1 onion (chopped)
  • Bell peppers (yellow green and red) or whichever you prefer
  • Maggi
  • Salt
  • Pepper
  • vegetable or olive oil
  • First thing I do is chop my vegetables, if you are using the mixed vegetable pack all you need to do is chop the peppers, onion and spring onion and keep aside.
  • Boil water, put your rice in a bowl and when the water is hot pour it into the rice ,stir and cover for about 10-12 minutes. Wash with warm water using a sieve drain the water out, cover and keep aside.
  • put a pot on the cooker, pour in some water just about 800-900ml to start with. put the curry into the water , add some blended pepper or which one you use for your cooking at home. I use blended habanero chilli. Put in some of your chopped onions, salt and Maggi cubes. (tip: 2 maggi cubes to 1 cup of rice) but i usually end up adding more depending on your taste.
  • Pour in the rice and stir to mix, the water should just be above the rice, add some more water if it is not, but be careful not to add so much water, so you do not over cook the rice and get it sticky.
  • Cover the pot and allow the rice to cook, I have the habit of checking my rice every 5 minutes. Just to make sure its not too soft. It should be cooked in 20 minutes or less.
  • In another pot put two cooking spoonful of oil, allow to get hot.Add remaining onions, add prawns (I used already cooked ones for this ice, but if you are using the raw ones, cook for about 10 minutes or till they get pink), add mixed veg, peppers, sweetcorn and i always add spring onions last. I add about 2 cues of Maggi to my vegetables, a pinch of salt or two and leave to cook for about 10 minutes.
  • You can choose to pour in the vegetable mixture directly into the pot of rice and mix together or you can get a different pot or bowl, dish 3 cooking spoon of the rice and one spoon of the vegetable and mix , keep going continuously till you have mixed everything.
  • Your rice is ready to eat.
